How to cook eggplant?

Stewed Eggplants with Garlic and Tomatoes

This is a simple simple recipemost housewives use especially in the summer. For cooking it is better to choose young eggplants that do not need cleaning. Now we will tell you how to cook stewed eggplants.

For this dish we will need:

  • 400 gr of aubergines;
  • 2 tomatoes;
  • 1 onion head;
  • a few cloves of garlic.

We start cooking:

  1. Cut the onions and cut the eggplants into slices that you like best.
  2. We dump the onion into a frying pan and fry until golden.
  3. When the onion is slightly fried, we discard the eggplant, salt and cover with a lid for 5-7 minutes.
  4. Three grated garlic and cut tomatoes in circles.
  5. Dilute in 100 ml of water grated garlic and fill the eggplant. Next we discard tomatoes. Stew for another 10 minutes.

You can serve with fresh herbs.

Stuffed Eggplant

Eggplants combine well with mushrooms and vegetables,so they can be stuffed both. With mushrooms it turns out an independent and full dish, which can be served both in cold and hot.

You will need:

  • 5 pieces. eggplants;
  • 300 gr of pickled mushrooms;
  • 1 tbsp. a spoonful of tomato paste;
  • 3 g butter;
  • salt and pepper to taste;
  • greenery.

We start cooking:

  1. Cut the eggplants in half, pull out the flesh from the middle.
  2. Cut the flesh of eggplant and onions.
  3. Grind the greens and spread it along with mushrooms, flesh eggplant, tomato paste and chopped onions in a frying pan, while adding butter. We cook it all for 6 minutes.
  4. When all this is ready, we pass through a meat grinder or through a blender.
  5. In advance, boil the cut aubergines and put into their center a mixture of mushrooms and eggplant pulp. Stew in the frying pan for about 7-10 minutes. You can serve from above with a sprig of parsley.

Eggplants in Korean

Korean cuisine has long been popular in Russia. Therefore, eggplants in Korean can become your favorite snack for alcohol or perfectly complement the main dish.

To do this, you need:

  • 4 eggplants;
  • 2 Bulgarian peppers;
  • 1 carrot;
  • 1 onion;
  • ground pepper, black and red;
  • 3 cloves garlic;
  • 1 teaspoon ground coriander;
  • 1 tbsp. a spoon of apple cider vinegar;
  • vegetable oil for frying.

We start cooking:

  1. We cut the eggplant into strips. Soak them in water and salt for 6-8 hours.
  2. When eggplants are sufficiently soaked in water, fry them in a frying pan in butter.
  3. We chop the pepper and carrots with straw, and the onions are semirings. Grind the greens, and garlic three on the grater.
  4. We mix all the ingredients in a plate, do not forget about salt and spices, fill it with vinegar and put it in the fridge for another 8-12 hours.

Eggplants in a microwave oven

Ingredients:

  • 400 gr of aubergines;
  • 3 tomatoes;
  • pepper ground black;
  • greenery;
  • salt to taste.

We start cooking:

  1. We prick the eggplant with a fork several times and cook in the microwave for 4 minutes at a power of 850 watts.
  2. We take the eggplant and cut it into small pieces, put it in a cup, add crushed garlic, salt and pepper.
  3. Cut the tomatoes in circles and spread on them the resulting stuffing. We decorate with greenery.
