The presentation of the dish using the correct, high-quality and beautiful dishes adds to its attractiveness and appetizing.
Serving origin history
For the first time, people began to use decorated containers for drinking and eating as elements of serving in ancient times. For example, the Egyptian pharaohs used beautiful dishes during their feasts. The Greeks in that era used clay and glass bowls and drinking cups. The rich ancient Romans ate and drank from silverware with gilding, exquisite glasses of glass were also in use.
From the 11th century, a tablecloth appeared in Europeans, which covered the table and at the same time served for wiping hands.And the XIII century gave the world a gargle for fingers, because on the tables there was always meat, which was eaten right by hand. At the same time began to use floral wreaths for table decor. But the devices were present in very limited quantities.
XIV-XV centuries are characterized by the appearance of tin and wooden plates, salt shakers and beverage containers in the homes of wealthy people. Spoons and knives were still not enough, so the guests brought these devices with them.
The use of special containers for roasts, tureens, tin and silver plates became widespread in Europe in the 16th century. Occasionally it was possible to meet dishes from the Chinese porcelain. At the same time, the plug begins to appear in use.
In the 17th century, cutlery acquired forms similar to modern ones. The 18th century gave the world porcelain sets, with the help of which for the first time it became possible to serve the table with the same dishes. Over time, the culture of feast went on a higher level. But from the second half of the 20th century, Americanization began to occur intensively, fast food and self-service establishments became more and more popular. This adversely affected the culture of food.Fortunately, in our time, people pay much more attention to the design of the place where they eat food, the quality of dishes and appliances. Modern beautiful table setting allows you to create a special atmosphere suitable for a particular case.
There are many options for table setting. It depends on the status of the establishment, the form and time of service, the focus of the event and the number of guests. Pre-serving is applied when the restaurant tables are prepared to receive visitors. Its purpose is to complement the interior of the institution and speed up the service process. Serving for breakfast does not require a large number of dishes for table decoration. During the lunch service on the business lunch menu, the number of devices is reduced to a minimum. But in the evening the decoration should be complete. Table setting for a wedding is also one of the existing varieties. In addition, there are different design options for celebrating anniversaries, serving banquets according to the menu and outdoor events.

Table setting in a restaurant involves the following conditions:
1) Compliance with the design type of service.
2) The combination of serving and the proposed menu.
3) The harmony of table setting and table shape, the chosen color scheme and the interior of the restaurant.
4) Display of national characteristics and thematic focus of the event.
5) The location of all serving items according to existing rules.
Classical table setting in the restaurant is carried out according to the scheme shown in the figure below.

Table setting should be carried out in the following sequence:

- Put the appropriate cutlery.
- Put the dishes out of glass and crystal.
- Put on the table linen napkins.
- Place the equipment with spices.
- Decorate the table with vases of flowers.

The first stage of serving - table cover tablecloth. This table linen should be made of cloth. Sometimes a dense soft base is placed under the main tablecloth to avoid the sound of knocking devices on the surface.This layer can be made of fleece or flannel and should have dimensions that strictly coincide with the size of the table around the perimeter.
Polyethylene tablecloth is also used in establishments. But this only allows table setting in the restaurant for a morning lunch and lunch on the business menu. This tablecloth spreads over the main fabric. In the afternoon, the coating of oilcloth must be removed.
The size of the tablecloth is selected individually. Its edges should hang down 20-30 centimeters below the edge of the table evenly around the perimeter. The corners of the tablecloth are placed strictly down parallel to the legs.
The choice of color of the tablecloth depends on the nature of the upcoming event, the concept of the institution and its interior decoration. For everyday serving, you can use light-colored coatings or with a pattern. If you use a dark color tablecloth, it requires the use of light-colored dishes. Table setting for a wedding involves the use of a white coating.
Porcelain or Earthenware
When arranging the plates, you need to remember that each guest should have at least 80 centimeters of space.
Clean and shiny dishes placed on each other in the following order (bottom to top):
- A large flat plate under the main course.
- Deep dishes for soup.
- A small plate under the cold snacks.
On the left side of the main dish there is a small plate for bread, on which a butter knife is placed on top.
Dishes for the main dish should be located opposite the chair and at a distance of two centimeters from the edge of the table. The distance between the bread plate and the main dishes is from 5 to 15 cm. If a dish is not provided in the selected menu, then the corresponding plate should not be included in the table set.
Serving appliances should be not only beautiful, but also functional. Therefore, all elements are laid out in this way: from the far edge of the main plate are those items that will be used in the first place. Devices should be located at a distance of 5-10 millimeters from each other. On the right side of the dish is a cocktail fork. This is followed by a tablespoon. Teaspoons and dessert spoons are placed even closer to the plate.Closest to the main dish is a table knife with the blade pointing inward. All these elements must be kept in the right hand.
On the left side there are forks: for salad (it has four teeth and a small size), for the main course (the largest) and for dessert (a small one, which has three teeth). These cutlery should be placed teeth up and in use with the left hand.
The butter knife is positioned in the center on a plate for bread standing near the main dish.
Beautiful table setting is not possible if there is a blockage in the devices. No need to put one or another element, if it is not used during the meal. For example, if there are no fish in the menu, respectively, the knife and fork are not needed for it on the table.
If you intend to serve more than three dishes, all cutlery is not laid out at once. They endure later, as needed.
Glass and crystal ware
On the table you need to put so many glasses, how many drinks are supposed to be served during the meal. In the classic version provides glasses for white and red wine and a glass for water.
When serving, the waiter will independently fill the necessary glassware with the appropriate drink.
Glassware for serving the table is set to the right of the main plate in a straight line or arc. If there are more than three glasses, then they are set up in two rows so that the large ones do not obscure the small ones.
The stronger the drink, the smaller the size of the dishes intended for it.
Festive table setting strictly prohibits the use of paper napkins. Cloth linen should be used, which is thoroughly washed, starched and ironed. Original figures from napkins carry an additional decorative function. The color and texture of these elements are selected depending on the concept of the celebration and the interior of the restaurant.
Guest need to take a napkin for a free corner, pull - and it will open. Next, fold it in half and put it on your lap. This napkin is designed to protect clothes from contamination during meals. If necessary, wet the lips with its inner side.
Additional elements of decor
A win-win design table are fresh flowers. Vases with this decoration should fit into the overall style of serving. It is recommended to choose flowers that do not have a strong smell for decorating the table so as not to interrupt the aromas of dishes.
Another possible element of decor is candles in glassware. They bring romance and comfort to the overall atmosphere.
Table setting in a restaurant is an art that not only increases the attractiveness of the food served, but also complements the atmosphere of the establishment. There are several types of table design, which differ from each other in some nuances. Serving rules suggest the placement of a seemingly powerful arsenal of dishes and cutlery. But on closer examination it turns out that everything is not as difficult as it might have seemed at first. And remember that back in 1825, the French philosopher and deli Jean Anthelm Brillat-Savarin said: "The right to the joy of a good table belongs only to man."
